Welcome to my vision of sweetness! Dolce is the Italian word for sweet, and what a perfect word to describe the culinary fusion that we have achieved. The Euro Asian inspired bakery brings the sweetness, and the eclectic Italian inspired menu in the café makes it all come together as “Dolce”. Dolce Café & Bakery was established in 2007 as the first café & bakery of its kind in the Inland Empire. The vision came to me during my travels through Europe and New York, as I stopped at the various local cafes and eateries that inspired me to create the unique concept that you see before you today. I created a place where I can share my melting pot of culture, flavors and cuisine with the Inland Empire. Undoubtedly, direction of my support staff under Chef Neri has made my dreams a possibility and together we bring Dolce to you! Having grown up in the restaurant industry with parents that owned many fine-dining restaurants, I am no stranger to the intricacies of restaurant management. I graduated from the USC Marshall School of Business with a double emphasis in Entrepreneurial Studies and Marketing with a strong desire to open my own business. Here I am, 7 years later, with a drive and passion to make my dreams come true. May you “Live Sweetly”…and enjoy all the Dolce has to offer! |

Chef Robert Neri has been cooking professionally for sixteen years in several varied kitchens and cuisines. He’s worked for New York/ California Restaurant bosses Counterpointe Restaurant Group, the glamorous Wolfgang Puck Inc., corporate conglomerate giants, French fusion bistros, Old World Italian Cafes, Fishhouses, and even braved the world of Asian cuisine & sushi. He cites his mother’s lesson in eggs and potatoes his most important cooking lesson, but gives credit to his past mentor Chef Mario for his hard nosed style, trust & recognition; his past Sushi Chef for giving him a chance, and Anthony Bourdain for his real life take on the gastronomic world. While at Dolce, Chef Neri has incorporated his love of Italian, French, Spanish/Latin & American cuisine to bring familiar and new flavors to those who can truly appreciate it. His staff is managed by his trusted Commis & Cooks that have learned these concepts & recipes to bring out the best in their Chef and Dolce. He is never satisfied with mediocrity or complacent with his present knowledge and his culinary passion will most definitely be apparent on your plate. Buon Appetito! |
